Heat oil in a skillet. Add the onion, garlic, and bell pepper and cook for 3-4 minutes until the vegetables have softened. Add the prosciutto to the skillet and fry for 5 minutes or until the prosciutto is just beginning to brown.
Add the chickpeas to the skillet and cook, stirring for 2-3 minutes until warmed through.
Sprinkle with chopped parsley and transfer to warm serving plates. Serve with lots of fresh crusty bread.
COOK'S TIP:Whenever possible, use fresh herbs when cooking. They are becoming more readily available, especially since the introduction of small pots of herbs you may purchase at your local grocery store. This ensures the herbs are fresh and also provides a continuous supply.
