TUSCAN SALAD TOSS

INGREDIENTS :

calc8 oz of Tuscany field greens salad blend
calc6 oz (2 cups) of mozzarella cheese, cubed
calc ½ cup of UNICO Medium Black Pitted Olives, halved
calc ¼ cup of coarsely chopped red onion
calc ¼ cup of pine nuts
calc1 medium tomato, cut into thin wedges
calc1 small zucchini, thinly sliced
calc15 oz of canned PRIMO Red Kidney Beans, drained and rinsed

DRESSING :

calc 1/3 cup of UNICO Premium White Balsamic Vinegar
calc 1/3 cup of PRIMO Extra Virgin Olive Oil

PREPARATION:

In large bowl combine all ingredients and toss gently.

COOK'S TIP: Use your favorite salad greens in place of the Tuscany field greens. Try slivered almonds or toasted walnuts in place of pine nuts.

This no-cook salad makes a refreshing supper for a hot summer day. Garlic breadsticks, crisp rosé wine and red and green grapes finish the menu.
