CHICKEN BREATS WITH PIZZAIOLA SAUCE

INGREDIENTS :

calc7 oz (200 ml) Primo Whole Plum Tomatoes
calc4 chicken breasts
Salt and pepper
calc2 tsp UNICO Pure Olive Oil
calc2 tsp UNICO Capers
calc2 UNICO Fillets of Anchovies
calc ¼ tsp chopped oregano
calc5 fontina cheese slices
calc75 g bacon slices
Milk if required

PREPARATION:

Put the tomatoes in a bowl along with the liquid. Mash with a fork, season with salt and pepper then add the oil, drained chopped capers, anchovies and the oregano.

Flatten the chicken breasts with a meat mallet and lay in an oiled ovenproof dish. Season with salt and pepper; cover with the slices of cheese. Derind the bacon and lay the slices on top of the cheese. Top with the tomato mixture and cook in a moderately hot oven (190°C, 375°F) for 40 minutes.
