POTATOES WITH OLIVES AND ANCHOVIES

INGREDIENTS :

calc2 lbs (1 kg) of baking potatoes, peeled
calc ¼ cup (60 ml) of PRIMO Extra Virgin Olive Oil
calc3 oz (90 g) of UNICO Medium Black Pitted Olives, chopped
calc1 tbsp of UNICO Capers, drained and chopped
calc6 UNICO Fillets of Anchovies, chopped
salt and freshly ground pepper
calc1 tbsp of chopped parsley

PREPARATION:

Cut the potatoes into wedges. Heat the oil in a cast iron skillet over medium- high heat. Add the potatoes. Sprinkle with the olives, capers and anchovies. Season with salt and pepper.

Cover, reduce heat to medium and cook for 30 minutes, stirring gently from time to time but taking care not to break up the potatoes. Scatter the parsley over the potatoes and serve.
