Drain the beans and dice the tomatoes. Heat the oil over medium heat. Add the garlic and sage and sautÃ© until fragrant. Add the tomatoes and simmer gently for 45 minutes. Add the beans cover and cook on very low for 5 minutes. Season with salt and pepper. The finished dish should have the consistency of soup.
COOK'S TIP: This is one of the most famous of Tuscan winter dishes. It is usually served with mildly spiced sausages, which are sautÃ©ed in a cast iron skillet for a few minutes with a tablespoon of olive oil.
