 CLASSIC MEDITERRANEAN PASTA SALAD Serves:  


INGREDIENTS :

375 g PRIMO GrainWise Whole Grain Penne Pasta
½ cup UNICO Julienne Cut Sun Dried Tomatoes packed in oil
1 tbsp UNICO Capers (drained)
½ cup UNICO Marinated Artichokes (chopped)
½ cup UNICO Sliced Black Olives
½ cup UNICO Roasted Sliced Red Pepper OR
½ fresh red pepper chopped into cubes
½ cup Unico Roasted Yellow Pepper sliced
½ fresh yellow pepper chopped into cubes
¼ cup UNICO Premium White Balsamic Vinegar or UNICO White Wine Vinegar
6 tbsp PRIMO Extra Virgin Olive Oil
½ cup feta cheese (crumbled)
1 tsp of Oregano
1 clove garlic chopped
Salt & Pepper to taste



PREPARATION: 
Cook Pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Rinse pasta under cold water for 30 seconds. Transfer to large bowl and let cool.
Add sundried tomatoes, capers, artichokes, olives and red & yellow peppers. Mix the vinegar, Olive Oil, garlic & oregano together and add to bowl. Garnish with the Feta cheese. (Can be made 6 hours ahead.) Cover, chill. Bring to room temperature before serving.
